La Mercière was born in 2013 by Imène and Franck. In August 2017, they moved in Cosswiller.

The raw materials used are organic and mostly local . The malt comes from Lahr in Germany, the hops from the agricultural school of Obernai, the water comes from Cosswiller and they grow their own yeasts.
